When you can, try to find a HB SLI bridge as you're actually bottlenecked in SLI performance by using "non-qualified" regular SLI bridges.

Definitely go for the LG 27GL850 because 4K 144hz has too many technical hurdles to overcome before things get mainstream.
A single 49'' Monitor doesn't give really enough top and bottom immersion and the decently priced ones are all 3840x1080, so you will need more anti-aliasing than a 27'' monitor setup.
For flight sims, I recommend 3 LGs in Nvidia Surround. They're IPS so you can't go wrong there. You will need to connect one of them via USB-C so that all 3 are connected by DisplayPort.
For realtime transcode, a 1650 Super may get you better transcode results for streaming directly to a device while the file is transcoded in realtime. Turing NVENC is superior to the 1050 in every way.
Beware of the Enermax AIOs. They've been notorious for gunking up after some use.
The high temperatures may be due to the pump running on PWM and not at full speed. The pump needs to run at full speed because it is exceptionally weak in terms of water flow rate.
Beware that these HUANAN X79 boards don't have good VRM cooling, so don't overclock. (The E5-2xxx series only allows BCLK OC so it's not really worth it anyways)
The PSU would also be where I'd be concerned if you plan a GPU upgrade.
Be sure to follow Bryan from Tech YES City's advice and turn off all Spectre and Meltdown protections to get the most out of X58.
If you were to make an upgrade, the Ryzen 5 1600 AF is a good upgrade path that gets you into the AM4 ecosystem.
If you've had luck with the PSU, it's worth keeping if it hasn't failed you.
However, I'm more leaning to Seasonic OEM PSUs for budget builds.
Do be aware that there is no Linux method to flash the "performance" VBIOS right now for the 5600 XT, so you need to still use Windows for that.

I would highly recommend you replace your 2560x1440 with a LG 27GL850 when you have the chance. You need to experience high refresh gaming with a 2080 Ti.

I'm waiting myself for a 10920X to drive my VMs. 10 cores honestly isn't enough for my equally strange VFIO setup.
Threadripper 3000 latency was pushing it for acceptable latency for me, I'm personally looking at the 12 core model since more cores might mean more mesh travel time.
Only reason I'm not looking at the 10 core is I need to have enough cores for VMs.
Is that applied at BIOS level or through XTU? If it's through XTU, you have no problems, but if it's BIOS level, beware of microcode updates.
GH5 lacks Line In sensitivity unfortunately. That's where the GH5S makes up for that lacking feature.
The Zoom H5 and H6's newer firmware has a record start beep you can set so that syncing is easier if you feed a line out into the camera for a scratch audio record on camera.

You've setup the VRM fan on the A40 interestingly so it tries to suck away heat from the VRM, when the best cooling performance can be had with the fan blowing onto the VRM. See my build with the A80 to see what I mean, and those lower end X299 boards definitely need that.

Since you did put a D15 in there, you can now do PBO offset overclocking if there's enough airflow in the case. Just be careful with the lower end ASrock boards.
Extremely clean build! Since it's only a 8-core, the TUF board isn't really going to hinder you as much, but you do have room to upgrade.
I do see a lot of components have been carried forward. Once you do get a 3900X, get some low latency Trident Z Neo 3600 CL14 for DAW work, because Ryzen 3000 likes 3600mhz at low latencies, and it's beneficial to DAW work too.
If that is the case, move the distro plate forward about 1 1/2 inches and use high static pressure intake fans, then slow the RPM of the exhaust fans since you will have created an airflow situation.
Try the Catalina Beta versions. They might have better luck as Navi drivers mature.
For AMD motherboards specifically, they usually put the worst components on their mATX offerings. It hasn't changed for years. I had to put a ITX board in a mATX case to get good VRM quality.
You haven't seen overpriced in Canada until you've seen how much they gouge for Threadripper 3000.

Even Linus' Hack Pro is better than the new Mac Pro. And it's actually watercooled.
You're still in a heavy negative pressure setup, which will fill your system with dust without proper filtration. (the stock filters are really coarse, and won't filter the fine dust.)
If the Distro plate is instead replacing the front glass, then the side is full of intake fans, it's a much better config.
I suffer terrible bottlenecking in Unreal Engine 4 titles, enough that I'm considering a platform swap. Once you have an Unreal Engine 4 title you want to play, you are going to be in for a bad time because of weak single threaded performance.

You could get truly screwed like I did buying a E5-1660 V2 on a Gigabyte X79 Rev 1.0 motherboard to have it not post.
For Gigabyte and X79, the ONLY working mobos are Rev 1.1 mobos for V2 Xeons. I speak from experience.
I run a 4960X now with my Rev 1.0 Mobo and I'm not satisfied with single core performance in Unreal Engine titles. How's the 4820K doing for you in UE4 titles? For me, even with a 4.4Ghz OC, it severely bottlenecks the single thread.
That's some really good RAM. Run it at 3733Mhz with tight timings and you got a extremely capable machine.
If you're able to, try to get the memory to hit 3600Mhz, as that frequency with tight timings will help with memory latency for music production.

A cassette with "Awesome Mix Vol 1." written on it in the cassette slot.

The included tension torx driver in the Threadripper box is EXTREMELY important to not bend pins on Threadripper. Using any other Torx driver, the risk of overtension is FAR too high.
As you don't really need anything more graphically intensive, I suggest a lightweight desktop environment so resources aren't wasted on rendering GNOME.

You may benefit though from using the Nvidia Creator drivers rather than the Geforce drivers.
I would be concerned about a 92mm Noctua cooler if you're running a 130W TDP chip. It could be worth it if you used a Hyper 212 Black Edition instead.

Latency on Threadripper 3000 isn't really the best for DAW work. You ideally want to get your memory to 3600Mhz to cut down on memory latency, since Threadripper 3000 has more memory latency than X570.
